Cooking Steps
STEP 1/12
Place anchovies and almond slices in a dry pan.

Stir-fry anchovies and almond slices over low heat for 5 minutes.

Stir-fry anchovies in a dry pan for 5 minutes to allow moisture to evaporate from the pan, support them in a strainer, and shake off the crumbs.

Now, let's make a seasoning that will determine the taste of stir-fried anchovies. Add 3 spoons of cooking oil while turning off the heat.

Add 1 spoon of sugar (I used raw sugar) and 1/2 spoon of minced garlic.

Add 1 spoonful of mayonnaise and 2 spoons of honey (or oligosaccharide).

Please add 3 spoons of cooking wine.

After adding all the seasoning, turn on the heat and stir-fry well until the seasoning boils to prevent the seasoning from burning over low heat.

When the sauce boils up, add the pre-fried anchovies and almond slices and stir-fry well over low heat so that the sauce is evenly coated. Turn off the heat when the anchovies are well seasoned. You have to fry anchovies in a dry pan in advance and make them with moisture to catch the fishy smell. Stir-fry it in a dry pan, put it on a strainer, remove the anchovy crumbs, and stir-fry it in the sauce to eat the neat stir-fried anchovy. I didn't put soy sauce in stir-fried anchovies. The anchovies themselves taste salty, so they were delicious even if you didn't put them in. Mayonnaise upgrades the savory taste of anchovies.
