You have to fry anchovies in a dry pan in advance and make them with moisture to catch the fishy smell. Stir-fry it in a dry pan, put it on a strainer, remove the anchovy crumbs, and stir-fry it in the sauce to eat the neat stir-fried anchovy. I didn't put soy sauce in stir-fried anchovies. The anchovies themselves taste salty, so they were delicious even if you didn't put them in. Mayonnaise upgrades the savory taste of anchovies.
