Rub the lemon in the thick salt.

Put the lemon in a bowl and pour enough water to cover the lemon.

Put baking soda and vinegar in water and wait 10 minutes.

Blanch lemons in boiling water for 10 seconds.

Soak blanched lemons in cold water.

Using a grater, zest the drained lemon only the yellow skin.

Cut the remaining lemon in half after making the zest.

Cut the lemon in half into juice.

Add eggs, sugar, salt, lemon zest, and lemon juice to the bowl.

Stir over low heat to medium hot water for about 10 minutes.

When viscous, turn off the heat and melt the butter.
