Why are you wiping the tofu?
If tofu is too watery, salt and seasoning do not soak well because of the moisture on the surface of tofu. Make sure to dry the tofu gently with a kitchen towel.
What kind of pork should I choose?
The key to today's braised tofu is to mix rice with the meat seasoning, so it's good to use minced pork. You can choose it regardless of the back leg meat, front leg meat, sirloin, etc.
