How to make Japanese bamboo shoots
I'm cooking a lot of bamboo shoots to make it taste like Arin in cold water. Today, I made braised soy sauce with bamboo shoots as a Japanese dish. It's delicious even if you eat it as a side dish, and it's delicious even if you cut it into small pieces. Japanese soy sauce braised in soy sauce is not strong and has a light and healthy taste, so I sometimes make various vegetables such as carrots, broccoli, lotus roots, burdock, etc., but when I made it with boiled bamboo shoots, it became a crispy, sweet, and well-seasoned bamboo shoots. The crispy bamboo shoot's taste blends well with the soy sauce, making a light and delicious side dish is made. Other vegetables are also used in various ways, so if you cook them with this combination of seasoned soy sauce, you can eat a lot of vegetables, and it's mild, so it's easy to eat.

Cooking Steps

I boiled raw bamboo shoots for about 40 minutes and boiled them in cold water for more than 4-5 hours to get rid of the arin taste and used them in the refrigerator If you use commercial bamboo shoots or frozen bamboo shoots, don't defrost them and blanch them in hot water.

Rinse bamboo shoots in water and drain them through a sieve.

Mix together the marinated soy sauce. If you add Japanese sauce, sukiyaki soy sauce, you can feel the Japanese atmosphere. Sukiyaki soy sauce or red crab soy sauce is low in salinity, so it looks like a lot, but it's not that salty. If you don't have sukiyaki soy sauce, please add more brewed soy sauce and boil it with kelp.

Cut carrots into long pieces, similar to bamboo shoots. I put carrots in the refrigerator because they're drying up, but you can add other favorite vegetables.

Pour 2 spoons of oil into a heated frying pan, pour the seasoning, and bring to a boil.

Stir-fry bamboo shoots and carrots, cover and cook over low heat for 10 minutes or so that the seasoning is well soaked.

-You can use other vegetables (broccoli, lotus root, burdock, cabbage, etc.) that are in the refrigerator or like for the seasoning of Japanese soy sauce. - Sukiyaki soy sauce tastes good, but if you don't have it, please add more brewed soy sauce and boil it down with kelp.
