STEP 1/12
I prepared ingredients for steamed ripe kimchi mackerel. Mackerel is an unseasoned frozen mackerel.

Put 1 tablespoon of red pepper paste, 1 tablespoon of sugar, 2 tablespoon of tuna liquid, and 2 tablespoon of perilla oil in a generous pot and mix well.

Pour 800ml of chicken broth. I added the broth that boiled chicken breast, but you can also add anchovy kelp broth or coin broth or water.

Add ripe kimchi.
STEP 5/12
When it boils over high heat with the lid closed, reduce it to medium low heat and boil it for 20 minutes until the kimchi is cooked.

I washed the mackerel clean and cut it in half.
STEP 7/12
If the kimchi is cooked, add mackerel and onions.
STEP 8/12
Add 3 tablespoons of cooking wine and 4 tablespoons of minced garlic.

Add the slanted green onions and red peppers. I put it in now because it's a frozen green onion, but please put in fresh green onion later.
STEP 10/12
Cover and simmer over medium heat for 15 minutes. Then the mackerel will cook well.
STEP 12/12
It's steamed ripe mackerel that's delicious without any special seasoning. The sour ripened kimchi really caught the fishy smell of mackerel. Even frozen mackerel was not dry and the flesh was very soft.
I made delicious steamed mackerel with ripe kimchi and frozen mackerel.
