Cooking Steps
STEP 1/22
Measure the powder (salt, baking powder, sugar, gravity) and place it in a food processor container. Beat in the egg, mix the whipped cream and vanilla extract together, and put 5g separately on top of the dough and put it in the refrigerator. Cut butter into cubes and prepare it cold, and leave it in the freezer for a while when the room temperature is high.
STEP 2/22
Lightly stir and mix the powder ingredients in the food processor (hand blender) three or four times.
STEP 3/22
Add cold unsalted butter and heat about 10 times, cutting for 3 seconds.
STEP 4/22
The butter mixes with the powder and grinds finely as it becomes sticky.
Do not grind too much, just enough to show small grains.
STEP 5/22
Stir in cold liquid ingredients (egg + whipped cream + vanilla extract) and pour.
STEP 6/22
Turn the food processor about 15 times, cutting it off for 3 seconds.
STEP 7/22
When the ingredients are evenly mixed and begin to clump together into small chunks, pour over the parchment paper.
STEP 8/22
Use a scraper to gather the dough and form it into a lump.
STEP 9/22
Cut the dough in half.
STEP 10/22
Lay the cut dough on top.
STEP 11/22
Place the scraper on top of the overlapping dough and press it with your hands. Repeat cutting, overlapping, and pressing the dough three to four times. It's a work to give the scones a grain, so even if you omit it, the scones come out well.
STEP 12/22
Finish the process of grinding.
STEP 13/22
Use a rolling pin to push the dough to a flat and even height. The height of about 2.5cm is appropriate.
STEP 14/22
Choose the dough and trim the shape of it so that it can be cut beautifully.
STEP 15/22
Cover the dough with parchment paper (paper foil) and refrigerate it for 1 hour.
STEP 16/22
Remove the finished dough and cut it to your liking.
You can take a shape with a circular frame or cut it into a square shape.
STEP 17/22
Place a Teflon sheet or paper foil on the pan and pan at regular intervals.
STEP 18/22
Using a brush, apply the remaining egg mixture (egg + fresh cream) thinly to the top of the dough. When you apply egg wash, it turns golden brown when it's.
STEP 19/22
If you have a non-refundable shrine, sprinkle it on top. It can be omitted, but it looks pretty if you sprinkle it, and you can enjoy it without jam.
STEP 20/22
Place in preheated oven and bake. Preheat the oven for more than 15 minutes. Preheat to 210 degrees and bake at 190 degrees for about 20 minutes.
STEP 21/22
Please lower the temperature a little if the bottom grilling color seems to be too dark. If the top part is cooked deliciously, it's almost done.
STEP 22/22
Place the scones out of the oven on a cooling net and cool them down.
You can enjoy scones more deliciously if you eat them warmly.
Seal the remaining scones and store them in the freezer, and heat them in a preheated oven to enjoy them like freshly baked scones.
Enjoy it with hot tea or coffee!!
If the room temperature is high, put butter and powder ingredients in the freezer and use them. If you make it with soft flour, you can eat scones with a snack-like texture, and if you make it with gravity flour, you can eat scones that are soft on the outside. For scones, it is very important to knead the butter without melting it all the way. Vanilla extract (vanilla bean paste) is optional, but when used, it improves the flavor and catches the smell of flour.
