1. Rub the thorns on the cucumber surface lightly with thick salt and wash them in running water.Cut the cucumber in half..Cut it in half again..Cut it into bite-size pieces and put it in a bowl to pickle.

2. It's a recipe for crispy cucumber kimchi..It's in the process of pickling.Put 400ml of water and 1/2 cup of thick salt in a pot and pour evenly into the cucumber when it boils hard.
After pouring 800ml of cold water, mix hot salt water with cold water...Let it soak for 30 minutes.Fry cucumber in hot salt water...I'll pour cold water right away...Give the surface of the cucumber a temperature difference...If you pickle it, it becomes crunchy cucumber kimchi.

3. Prepare the sauce and ingredients while the cucumber is pickled for 30 minutes2T minced garlic in a bowl. 6T red pepper powder. 5T anchovy sauce. 1T ground sesame.1T salted shrimp. Add 1T and a half of sugar and mix well to make the sauce.
=> When mixing cucumber kimchi later, we will add more seasoning.

4. Wash a handful of chives and cut them into 3cm long pieces Chop the half of the onion finely.

5. Don't wash the cucumber that has been pickled for 30 minutes...
Place it in a basket and drain. Please drain it for 5 minutes!!!!

6. Put the drained cucumber in the bowl chopped chives.I'll add onions..I'll put in the sauce I prepared..
Mix it well..Add seasoning to taste.I added a small amount of sugar and 1/4T of fine salt.Mix it and put it in a bowl and eat it in the refrigerator.It's good if you put it in cold...It's delicious even if you cook it
***Salted: 1/2 cup thick salt. 400 ml water.800ml of cold water
