STEP 1/16
I prepared ingredients to make yakbab.
I will make it with mini sweet pumpkin, date palm, cranberry, and date.
STEP 2/16
Wash glutinous rice three or four times and soak it in water for an hour.
STEP 3/16
1~2. Wash the sweet pumpkin clean and cut it in half and scoop out the seeds with a teaspoon.
Wash the pumpkin one more time and cut it into 1.5cm pieces.
STEP 4/16
Wash the jujube three times while rubbing it with both hands.
STEP 5/16
Cut the washed jujube with a knife to separate the seeds.
Roll some of the jujube into flower shapes and chop the rest into small pieces.
You can see it in detail in the attached video.
STEP 6/16
Put 700ml of water and jujube seeds in a pot and boil over high heat for 20 minutes.
STEP 7/16
Cut the date palm into half a centimeter thick slices.
STEP 8/16
1. Add 12 tablespoons of brown sugar, 12 tablespoons of dark soy sauce, and 3 tablespoons of sesame oil
2. Pour 200ml of boiled water from jujube seeds.
3. I stirred it well and made the Yakbab sauce.
STEP 9/16
1. Put the soaked glutinous rice in a big pot
2. Pour in the sauce, please.
3, 4. Pour water for the rest of the jujube.
(I poured 230ml.)
STEP 10/16
Pour about 2mm of water over the sticky rice.
STEP 11/16
1. Add ingredients except for flower-shaped jujube
2. Bring to a boil over high heat with the lid closed.
3. Turn it down to medium heat when it starts to boil. Bring to a boil for about 8 minutes until the water has subsided.
4. Reduce the heat to low and let it steam for 10 minutes.
STEP 12/16
1~2. Put 2 tablespoons of sesame oil into the rice
3 to 4. Mix it well.
The nurungji might get slightly pressed on the floor, so mix it gently.
I heard that nurungji with yakbap is really good.
STEP 13/16
1. Put the rice in a square container and press lightly with a spatula to make it comfortable.
2. After putting a wrap on the cutting board, cool the rice completely, and turn the container over on the cutting board, the rice will come out.
3-4. Put a little bit of sesame oil on the knife and cut the rice into appropriate sizes.
STEP 14/16
I decorated the rice with flower-shaped jujube.
STEP 15/16
They made it round, too.
STEP 16/16
If you divide the rice into small portions, wrap it in plastic wrap, store it in the freezer, and defrost it, it's very chewy and delicious.
Make yakbap rich in taste and nutrition and enjoy it during the upcoming Chuseok holiday.
If you control the amount of water and the heat, you can make delicious yakbap with a regular pot.
