Prepare ingredients for chicken broth
Prepare the stock ingredients first.
I'll peel the garlic first.
Garlic has whole garlic with skin.
And I use this whole garlic whenever I need it.
Soak garlic with skin in enough water~

Prepare other vegetables while soaking garlic.
After stirring, slice the radish into large pieces and peel off the carrots and cut them into large pieces.
And prepare onions in 4 or 8 pieces.
You can use the green onion as it is or cut it into big pieces.
Garlic is peeled and used as a whole.

When the ingredients are ready, put the vegetables, which are ingredients for the broth, in a large pot and boil the water.
It's chicken broth that will serve as the base for Chogye-guksu soup.

I put in vegetables first because I had to peel the chicken legs~
Let's start the Chogye Noodles.

Preparing chicken (removing chicken skin, optional)
Trim the chicken legs while the water boils.
To remove the skin from the chicken leg, cut the skin slightly using a knife and rip it off by hand.

You can filter out the oil later, but I thought it would be good to remove even a little in advance and boil it.
So I removed the chicken skin.

When the broth boils, add the chicken legs and boil them together.
Chogye noodles don't need a whole chicken form like samgyetang or baeksuk.
However, if I used one chicken, I could enjoy various parts, so I was going to use one chicken, but there was no antibiotic-free chicken in whole, so I prepared the necessary parts.

So I just use it as it is.

Add chicken breast.
I think chicken breast will be tough even if it is boiled well, so I'm going to give it mainly to the baby's legs.

Now, add the last ingredient, jujube.
The order in which the ingredients are put is not that important.
If it's ready all at once, it doesn't matter if you put it all in and boil it.
However, if you want to make a thick broth, I recommend that you cook the vegetables thoroughly.
It's gonna take a while.

Chicken breast seems a little dry, but there was a difference in degree depending on the mass.

Put a lot of water in a big pot and boil the noodles
Add the noodles and cook them.

If the noodles are boiled, you have to support them in a strainer and rub them in cold water to remove starch from the noodles so that you can taste the chewy noodles.

Making Chogye Noodles Soup
This is the broth I made the day before.
Even though the oil and foreign substances in the broth have been removed from time to time, the oil floats like this when it cools down.
You have to remove this oil, but I use a sieve.
The cooled and hardened oil is filtered through a strainer.

Add one commercially available dongchimi broth to the broth.
Dongchimi broth is used to be stored in the freezer.
Since the soup of Chogye noodles needs to be cool, keep the chicken broth in the refrigerator to make it cool and put the frozen dongchimi broth to make it cold^^
