Mushrooms have a lot of moisture, so it's easy to get soggy if you fry them once
When frying for the second time, fry until golden brown and drain the oil

Add 2 cups water, 3.5 tablespoons thick soy sauce, 3.5 tablespoons vinegar, 4.5 tablespoons sugar, and 1 tablespoon lemon juice and bring to a boil
