Soak 1 serving of glass noodles in water for about 20 minutes.

Put water in a pot and 1/2 large bottle of salt and boil over high heat with bean sprouts open.

When it starts to boil, toss several times, rinse several times with cold water, and strain through a sieve

Add all the sauce and mix well.

Boil the soaked glass noodles in boiling water for 2-3 minutes.

Put the boiled japchae right away in a bowl with bean sprouts, put the sauce, and mix it evenly. Rather than adding all the sauce, taste it twice and adjust it to your taste.

Adjust the seasoning with the sauce and cut up the chives at the end to complete the spicy bean sprout japchae.
The ratio of bean sprouts and glass noodles is just right. The texture is crunchy and delicious when there are more bean sprouts than glass noodles.
