Cut off the top and leaves of spinach and wash it clean and drain.

Place spinach in a pot, cover and blanch for 1 minute without water.

Let blanched spinach soak in cold water and cool.
*It was so nice to blanch it like this and save time for boiling water with less nutrition loss.

Cut the red pepper in half
Cut only the white part of the green onion.

Make soybean paste seasoning with miso soybean paste 1T, cooking wine 1/2T, plum syrup 1T, tuna fish sauce 1T, ground garlic 1T, sesame salt, and sesame oil.

Squeeze the spinach soaked in water and finish it with sesame salt and sesame oil.
Miso doenjang is also soybean paste, so it's salty if you put in a lot. Taste it little by little and adjust it to your taste. When blanching spinach, blanch it over medium heat for 1 minute, turn off the heat, and soak it in cold water to cool it down.
