Shrimp Spinach Pretata [Italian omelet with shrimp and spinach]!

Turn off the heat and cover the dish. Turn the pan upside down and put the pretata on the plate. Put it back in the pan to cook the top side. Bake for about 5 minutes on low heat enough to cook the bottom.
