Making Buckwheat Noodles :: Beef brisket Buckwheat Soba
Do you like buckwheat noodles? Buckwheat that is good for the body and tastes good! There's a cold wind, but it's hard to give up cold noodles. I'm going to tell you how to make a clean taste of buckwheat noodles with meat in it and good chewing taste. This is beef brisket buckwheat soba that I made because I wanted to eat cold meat soba at a famous Japanese restaurant in Daegu.

Cooking Steps
STEP 1/10
First, boil the buckwheat noodles in a pot with water.
Add 2 to 3 times the amount of water and boil it, and when it boils, add buckwheat noodles and boil it.
It only needs to be boiled for 1 to 2 minutes more than noodles, so please refer to it!
While the water is boiling, I'll chop up the green onions and cheongyang peppers.

Use only the white part of the green onion,

Remove the top of the cheongyang pepper and slice it thinly.

Press the beef brisket with a kitchen towel to remove the blood, add a little glutinous rice powder, mix it well, and blanch it once.
STEP 5/10
If you blanch beef brisket with glutinous rice powder, it becomes softer, more savory, and chewy, so I recommend you do the same even if you're lazy.
You just have to blanch beef brisket until it's cooked, and you can cool the blanched beef brisket by cooling it down or by immersing it in ice water.
Leave the beef brisket as it is and boil the buckwheat noodles.
STEP 6/10
When the buckwheat noodles are cooked, I'm almost done making buckwheat noodles.
All you have to do is wash the boiled buckwheat noodles in ice water and put them in a bowl.

I put some ice in the bowl.
It's a cold dish, but if you want to eat warm buckwheat noodles, of course you can boil it and use it.
Put 1 tsuyu and 3 tsuyu in a bowl to make broth,

Add the washed buckwheat noodles with water.

Put the green onions and hot pepper on top of the noodles
If you put the blanched beef brisket on top, the buckwheat noodles look great.
You can imagine the taste just by looking at it?

If you put wasabi on it and mix it well, it's cold noodles with beef brisket
Buckwheat noodles are done.
Making buckwheat noodles is really simple because you only need to boil noodles after using commercial ingredients, right?
The noodle dish itself is delicious, but it tastes touching with meat.
You can put in or take out the TIP. You can make it using commercial tzuyu, or you can make your own tzuyu with smoked anchovies. It's good to add wasabi, but you can skip Cheongyang red pepper if you like.
