Wash lemons with baking soda or salt.
Imported lemons should be cleaned carefully because residual pesticides and wax coatings should be removed.

For the third wash, soak it in vinegar water for about 10 minutes.

Blanch well-washed lemons by rolling them in boiling water.
You can blanch it as if you're rolling it once, putting it in, and then taking it out.

Rinse blanched lemons in cold water to remove moisture and grind only the yellow outer skin with a grater. The white part tastes bitter.

You can squeeze lemon juice from the remaining lemon kernels and use them for drinks or cooking.
Blanching is also part of disinfection and cleaning, not for cooking.
If you purchased organic lemons, you can skip them.
