Cooking Steps
STEP 1/14
Please prepare the ingredients first.
Mackerel is not salted mackerel, but salted mackerel.
Ginger juice is for removing fishy smell, but if you don't have it, you can use Mirim, Cheongju, and Soju instead.
If you don't have starch, you can use flour as a substitute.

Sprinkle 2 tablespoons of cooking wine on the trimmed mackerel, sprinkle with a little salt, and marinate for about 10 minutes.

Finely chop green pepper, red pepper, and green onion and finely chop chives.

Please make red pepper paste sauce in a bowl.
Add 2 tablespoons of soy sauce, 2 tablespoons of red pepper paste, 1 tablespoons of red pepper powder, 3 tablespoons of starch syrup, 2 tablespoons of sesame oil, 1.5 tablespoons of chopped green onion, 1/2 tablespoons of ginger juice (mirim, cheongju, soju), a little pepper, 2 tablespoons of cooking wine, and 1 tablespoon of minced garlic and mix well.

Drain the mackerel with a kitchen towel.

Sprinkle about 1 cup of starch flour on the front and back of the mackerel and shake it off.

Grease a pan with plenty of cooking oil and cook over medium heat for about 5-8 minutes from the skin side of the mackerel.

Turn the mackerel upside down and cook it until golden for about 5 to 8 minutes.

Remove any excess fat from the pan with a kitchen towel.

Don't use all the red pepper paste sauce and leave some.
