Red potatoes are also called castella potatoes for their soft texture. It is characterized by its high sugar content and starch content, making it sweet and fluffy. It's red on the outside like a sweet potato, and yellow on the inside.

Peel off the skin when the cleaning is done. You can peel thinly with fillers. It's much more yellow than regular potatoes.

I'm preparing water for boiling red potatoes. Dissolve half a tablespoon of flower salt in 600ml of water.

I put red potatoes in a pot and water with dissolved salt. You don't need to measure the amount of water too much because the potato is half submerged.

Cover and simmer for 25 minutes. To see if the potatoes are cooked or not, if you poke your chopsticks and go in well, it's all cooked.

Turn the potatoes over in the middle. That way, you can feel the more harsh potato taste. After boiling for about 25 minutes, drain and simmer until the water is completely gone, leaving 1 to 2cm high at the bottom of the pot. The water will disappear soon, so make sure to watch in front of the fire. If you don't, I'll burn it all.

Cover and shake the pot to make potato flour. Red potatoes are much softer than Sumi potatoes, so they kind of break.

The red potatoes are cooked deliciously.
When you boil potatoes, if you add salt, you can season them and increase the boiling point to make them cook quickly.
