STEP 1/8
A measuring spoon is about 8cc of rice used at home.
Put the dried squid in a bowl and soak it for about 5 minutes with water and mirin If there's no mirin, add a spoonful of sugar and soak it
If it's dried dried squid, soak it for 10 to 15 minutes
If it's not dry but hard!! Just soak it in lukewarm water for 15 minutes with mirin or sugar!

Cut the soaked dried squid a few times with scissors

Add the sauce and stir until the sugar is completely dissolved
If you don't have plum juice, add 1 spoon of starch syrup~

2 spoons of mirin (16g)
1 spoonful of soy sauce (8g)
1 spoon of starch syrup (10g)
1 spoon of plum extract, 10g (or 1 spoon of starch syrup (12g))
2 spoons of water (16g)

Drain the soaked dried squid on a strainer tray~
You don't have to squeeze it Just remove the running water
STEP 5/8
Put 2 spoons of cooking oil and 1 spoon of ground garlic in a frying pan and fry slowly over low heat
When the garlic starts to turn golden, add half a spoon of red pepper powder (4-5g)
Add half a spoon of red pepper paste (15g) and stir-fry it on low heat for about a minute
If you stir-fry these spices once, it's good
If you don't like this process, you can just mix the pepper powder and red pepper paste garlic in the sauce

Put the dried squid in the garlic, red pepper powder, and fried oil, put it on high heat and stir-fry it for a minute or two, then pour in the sauce and stir-fry it over high heat until the sauce disappears

If the sauce is all boiled down, turn off the heat and add half a spoon of mayonnaise at the end and mix well!
The reason why you put mayonnaise in the end is because the oil component of mayonnaise is coated on the surface of the ingredient, so it can be moist for a long time. If you just mix it in the sauce, it may taste savory, but it can't prevent moisture evaporation As soon as you mix it with other spices, the coating effect decreases a lot
Make sure to put in mayonnaise at the end. Then it feels more savory and moisturized for a long time
STEP 8/8
It's fried well Enjoy it! It's good to sprinkle sesame seeds according to your preference. For your information, it's better to grind sesame seeds on household mortar than just sprinkling sesame seeds
