Root vegetable burdock with crunchy texture! It is rich in inulin, a type of carbohydrate, which increases kidney function and promotes bowel movements. If you plan to go on a diet, I highly recommend burdock. The burdock skin contains a lot of nutrients, so I recommend you wash it clean without peeling it.

Cooking Steps
STEP 1/10
Wash and prepare burdock.
STEP 2/10
Cut the washed burdock diagonally into appropriate sizes.
STEP 3/10
Blanch the cut burdock in boiling water for about 3 minutes.
STEP 4/10
Wash blanched burdock in cold water.
STEP 5/10
Drain burdock washed in cold water.
STEP 6/10
Put sugar, vinegar, burdock, and salt in a bowl and pickle for about 10 minutes.
STEP 7/10
Make seasoning by adding red pepper paste, red pepper powder, vinegar, sugar, and minced garlic.
STEP 8/10
Drain burdock soaked in vinegar water.
STEP 9/10
Place the drained burdock in a bowl.
STEP 10/10
Add sesame oil and sauce and mix.
