STEP 1/11
I'll cut the green onions and prepare them
STEP 2/11
Prepare enoki mushrooms by cutting the bottom and cutting the length of your nails.
STEP 3/11
Cut bacon into bite-size pieces.
STEP 4/11
Please cut the kimchi into appropriate sizes, too.
STEP 5/11
Grease a frying pan or wok with plenty of cooking oil, then stir-fry green onions over medium heat to make green onion oil.
STEP 6/11
When the scented green onion comes up, add bacon and stir-fry on a slightly higher heat than medium to make bacon drippings. Stir-fry the bacon until it's all mushy.
STEP 7/11
Now add enoki mushrooms and kimchi, which are the main ingredients of the day, and stir-fry them well. You can adjust the stir-fry time according to your preference, but I like mushy kimchi, so I stir-fried it for a long time!
STEP 8/11
When the ingredients are well fried, push to one side and press 1 tablespoon of soy sauce into the empty space. Mix well with the ingredients when the soy sauce burns!
STEP 9/11
Now add 1 tablespoon of red pepper powder, 1 tablespoon of plum extract, 1 tablespoon of oyster sauce, and a proper amount of pepper and stir-fry it again.
STEP 10/11
When the ingredients are well seasoned, turn off the heat, add 2 bowls of rice, scatter the grains with a spatula, and mix well with the ingredients.
STEP 11/11
If you mix well with these ingredients, turn on the heat and stir-fry it once, and you're done!
Like most kimchi fried rice, enoki mushroom kimchi fried rice goes very well with soft-boiled egg or cheese!
