Making Tzuyu (flavored soy sauce)
I prepared a recipe for tzuyu that is essential to make and eat Japanese food at home. You can make it simple, but you can use it for various foods if you make it once. You can make about 500 to 600mL (2.5 to 3 cups) of tsuyu. Make Tzuyu and use it for various dishes such as Donburi, Fusion Banquet Noodles, Buckwheat Soba, etc.! :D

Cooking Steps
STEP 1/10

You can add or subtract the ingredients according to your taste!

You can prepare several shiitake mushrooms with the bottom.
(It's an ingredient that's thrown away with just the scent, so it's too wasteful to use as a whole of delicious mushrooms.)
STEP 2/10
[If you have broth ingredients]
1. Boil radish, anchovies, and kelp in water.
2. When the water starts to boil, remove the kelp.
3. After brewing for more than 5 minutes, remove anchovies and radishes.

[If you use a face pack instead of the broth ingredients]
1. Put radish in water and bring to a boil.
2. When the water starts to boil, add the pack again and let it boil for 5 minutes.
3. When the broth is boiled enough, remove the pack and radish again.
STEP 4/10
Please slice the green onions and onions and prepare them.
STEP 5/10
Bake sliced green onions and onions over medium-high heat until vegetables are golden brown.
STEP 6/10
Add stock, soy sauce, brown sugar, shiitake mushrooms, and ginger powder and bring to a boil.
STEP 7/10
Bring to a boil until the quantity is reduced by more than 1/2 time.
STEP 8/10
Remove from heat, mix with bonito, and simmer for a minute or two minutes.
STEP 9/10
Sift the finished tsuyu through a sieve.
STEP 10/10
If you put it in a clean sterilized glass bottle, it's done!
