STEP 1/16
Cookies Crust - Roll Digestive, Microwave butter and mix together
STEP 2/16
Divide it into the prepared bottle, make it flat, and keep it in the refrigerator until the next step.
STEP 3/16
Lemon Curd Peeling - Please make a zest
Don't let the white part of the lemon go in
Please divide it into 2 grams each
(Make a zest that you need to use later in advance)
STEP 4/16
Grind and prepare lemon juice, too.
If you don't have enough lemon juice, you can replenish the lemon juice sold in the market.
I think the more I make it, the stronger the sour taste gets.
If possible, I recommend you to drink juice and reduce the amount even if you use it^^
STEP 5/16
Beat in eggs, sift them twice, and mix with sugar
STEP 6/16
Add lemon juice and mix until sugar dissolves
I didn't strain it through a sieve. I just removed the seeds and put them in
STEP 7/16
Put it on low heat and mix it well
Paddle the bottom of the pot so that it doesn't stick
When it gets soft, turn off the heat and keep mixing
If you let your guard down a little, it'll ripen. Turn off when fluffy and mix with remaining heat
STEP 8/16
Squeeze the gelatin, mix it, add the zest, and it's curd peeling
Place cookies on top of the crust in the refrigerator and return to the refrigerator
STEP 9/16
Cream Cheese Filling - Mix in beaten cream cheese, sour cream, and sugar, one at a time
I used homemade sour cream. You can use yogurt after losing water for a day^^
STEP 10/16
It's good to dry the gelatin, melt it in the microwave, mix it in advance, and mix it with the cream cheese dough in a bowl
STEP 11/16
Add lemon juice and mix it
STEP 12/16
Whip the whipped cream to a flowable concentration and mix.
STEP 13/16
Add zest, mix it, put it in a bottle, and refrigerate it again
STEP 14/16
Lemon jelly - Add water, lemon juice and sugar and heat until sugar dissolves
Add the dehydrated gelatin and mix
STEP 15/16
Add the pigment to make a lemon color
STEP 16/16
Pour it into a bottle and slice the lemon into thin slices
Put it back in the refrigerator for about 4 hours and it's done.
1. 300ml bottle, 3 pieces
2. Use gelatin, except for crusts that will be laid on the floor.
Make sure to soak gelatin in ice water before each step and remove moisture when using it!
