STEP 1/8
We need an airtight container for ripening and storage
And you have to sterilize it with hot water
Pour in hot water and let stand for about 3 minutes
STEP 2/8
Cut the cabbage into small pieces
I'll cut the seedlings
You can slice it thickly depending on your preference
You have to cut it into small pieces to ripen it well and it's good to grill it later
STEP 3/8
Put the sliced cabbage in a big bowl
Add salt and knead
You have to rub it hard like you're doing laundry so that the water comes out well
Never throw away the water that came out
STEP 4/8
If you're done, add pickling spice
Pickling Spice is a mixture of various spices
You can add commercial products, or if you have spices, you can add one or two kinds
If you don't have it, it's okay not to put it in
STEP 5/8
Put it in a sterilized airtight container
Press it from the bottom so that it doesn't get in the air
Pour the cabbage into the water from the mixture until it is submerged
The parts that are not submerged in water can deteriorate during ripening
STEP 6/8
Cover the cabbage leaf with a lid
STEP 7/8
Place a small bowl to press down on the cabbage and close the lid
STEP 8/8
Mature in a cool place (below 15 degrees) for 2 to 3 weeks
If it tastes good, you can keep it refrigerated
Gas is generated during ripening, causing water to leak out and even explode
Wipe off the leaking water once every two to three days, open the lid, and check the ripening level
If it's completely submerged, it doesn't deteriorate
