Melt 2 tablespoons of butter first in a medium heat pan.
If you put it on high heat, butter will burn, so be careful of controlling the heat.

The point of grilled shrimp head butter is to cook it thoroughly so that the outside becomes crispy, not just when the outside is cooked.
Stir-fry until it burns.
You have to stir-fry until the butter is almost reduced to make the crispy butter on the outside.
The more it's cooked, the better it tastes.
You can eat shrimp head more deliciously if you leave a little meat when you trim it.
