Cheesecake Factory Pasta, Evelyn's Favorite Pasta of The Cheesec
There's a garden pasta called Evelyn's Favorite Pasta that started with cheesecake in New York and enjoyed at the successful franchise restaurant Cheesecake Factory, and it's so delicious that I make it at home. I have to go on a summer vacation, but I was worried about my protruding belly fat, so I made it with tofu today, but it was originally made with penne pasta. For those who are on a diet, I strongly recommend the Podu-myeon version

Cooking Steps
STEP 1/18
If you are using pasta, put salt in the boiling water as written in the box and boil it for that time. If you are using tofu like me, cut it into a thickness similar to a penne and blanch it in the boiling water for 1-2 minutes.
STEP 2/18
If you use tofu, if you stir it with chopsticks while blanching, the tofu that was attached to it will fall off little by little, but it won't fall off completely. Allow to cool while preparing ingredients.
STEP 3/18
While boiling the pasta,
Or while the blanched tofu is cooling down,
Cut the pumpkin, bell pepper, and eggplant into small pieces the size of a thumb.
STEP 4/18
The mushrooms are sliced thinly by separating the columns.
Originally, broccoli was supposed to go in, but I used podu instead of pasta, so I used mushrooms instead of broccoli, which doesn't go well with tofu. If you are using pasta, you only need to use the floret part of one broccoli.
STEP 5/18
By the time the ingredients are ready, the tofu noodles are all cold, so please remove the ones that are attached one by one. If you're using pasta, pass
STEP 6/18
We have to fry it quickly on high heat, so it'll be much easier if we prepare the ingredients in one side and start, right?
STEP 7/18
Heat a frying pan with plenty of olive oil and add 1T of ground garlic. Start with high heat.
STEP 8/18
It's a heated pan, so it'll sizzle quickly. Prepare the next ingredient right away..
STEP 9/18
Add zucchini and stir-fry for a minute
STEP 10/18
Add bell pepper and stir-fry it for a minute
STEP 11/18
Add eggplants and stir-fry for a minute
STEP 12/18
After adding the mushrooms
STEP 13/18
Add 1 ton of salt and stir-fry it for a minute
STEP 14/18
Sprinkle 1/2t of pepper powder
STEP 15/18
Add pasta noodles or tofu noodles, then reduce heat to medium strength.
STEP 16/18
Use chopsticks and spatula and turn off the heat
STEP 17/18
Cut the lemon in half and sprinkle enough juice.
STEP 18/18
At the end, you can sprinkle perazan cheese powder and eat it.
Pot tofu noodles taste different from pasta noodles, but they go well together as well as pasta.
