Tiramisu You Can't See Nowhere - 2 Plating
Tiramisu reinterpreted in two forms, not the tiramisu we used to know. I think I eat a new dessert because it has various flavors and texture such as mascarpone mousse, meringue cookies, and coffee jelly.

Cooking Steps

Put sugar powder in the white 3 times and mix it with a hand mixer.

Put meringue on a silicon pad at a certain thickness and bake it in an oven at 100C for about an hour.

Mix water, sugar, and cocoa powder in a pot and turn on the heat. When it starts to boil, turn off the heat and cool.

-Coffee jelly -
Put coffee, sugar, and agar in a pot, mix well, and turn on the heat. When it starts to boil to the center of the pot, turn off the heat and harden it in a pan.

Cut the hardened coffee jelly into the desired shape and prepare it.

Add sugar to the white 3 times each and beat meringue with a hand mixer. Add the yolk to the meringue, mix quickly, and sift the flour. Mix as light and fast as possible, until no raw powder is visible.

Add 5g of sugar to the whipped cream and whip it tightly.

Whip mascarpone cheese, yolk, and 20g of sugar with a hand mixer until the color is brightened and the sugar melts.

Add about 1/3 of the dough separately and adjust the amount of chocolate syrup to suit your taste.

Squeeze the mascarpone mousse and chocolate mousse in the cookie so that it crosses, cover it with cookies, and squeeze the mousse again.
