STEP 1/16
I'll grind the onions and pears, so just cut them into big pieces.
STEP 2/16
Slice ginger into pieces and grind it with onions and pears.
STEP 3/16
Pears, onions, and ginger. When it is ground to a certain extent, add minced garlic and chopped green onions. And pepper.
STEP 4/16
Since it's bibim naengmyeon, it should be reddish. Because it's spicy cold noodles. Add red pepper powder for the spicy taste. I put in fine red pepper powder and thick red pepper powder, but you can add only one.
STEP 5/16
I added honey to make it sweet. If you don't have it, you can replace it with sugar. And I grabbed the smell with rice wine and added fish sauce as the last liver. The soy sauce is dark and can change the color of the sauce, so I added fish sauce because I thought it would be better. It's tasty too.
STEP 6/16
When you go to a cold noodle restaurant, it's a noodle jade restaurant. When you go to such a restaurant, one of the garnish on top of cold noodles is pickled cucumbers. So I'm going to make pickled cucumbers. It's a mouse green cucumber. Remove the seeds from the cucumber. It can get wet.
STEP 7/16
Prepare the cucumber by cutting it in half without any water.
STEP 8/16
Put the thick salt in here, please. And then pickle it. It's enough to marinate for an hour.
STEP 9/16
Rinse the pickled cucumbers. And squeeze enough water. That way, the crunchy texture remains. Cut the pear with another garnish and prepare it.
STEP 10/16
It's time to boil the cold noodles. Cold pollack noodles are lumped together, so it is safest to dissolve them and boil them. The same goes for jjolmyeon-sari. Otherwise, the noodles may become lumpy and taste like sujebi!!!
STEP 11/16
Wash the boiled cold noodles in cold water as if you are washing them. And if you put ice on it, it won't get soggy and stay firm. Of course, you can wash it in ice water and drink it right away.
STEP 12/16
Add the prepared bibim naengmyeon sauce to the well-cooked naengmyeon sari. And mix it well. Mix 2 tablespoons of cold noodles with the sauce. We're going to add more seasoning as garnish later on.
STEP 13/16
Garnish. Boiled eggs, pears, and pickled cucumbers!!! Please put the sauce on the bottom and garnish on it.
STEP 14/16
Sprinkle sesame seeds and wrap it up!!! You can sprinkle vinegar to your liking. I added cold noodle broth. To make it's cool. It's like bibimnaeng but also mulnaengmyeon. It's also like makguksu. When you eat makguksu, you just eat it like bibimnaeng, and then you mix it with the broth at the end.
STEP 15/16
Now, let's make Pyeongyang naengmyeon. There's nothing much. It's just commercially available naengmyeon broth and naengmyeon noodles. But it's similar Like the real cold noodles you eat in Pyongyang, you sprinkle vinegar on the noodles. I heard that's how you eat it Lol
STEP 16/16
Then, pour the cold noodle broth. Pickled cucumber, pear, and one more thing!!! Pyeongyang naengmyeon also has sauce!!! So I put in the sauce for the bibim naengmyeon that I made. That's how Pyeongyang naengmyeon was made. It's already sprinkled~~~ All the seasoning
