STEP 1/19
1. how to prepare bamboo shoots
I removed the skin when I brought it, but the outer leaf is Jinbo? It's reddish brown and the skin
The green one is fresh when peeled off and turns brown over time, so it's better to choose the dark green one when peeled off
STEP 2/19
To cut bamboo shoots in half, peel off the skin, and cut off the hard parts and the top
STEP 3/19
If it's hard, peel off the knife or filler
STEP 4/19
Cut it into the right size
STEP 5/19
Put the rice water in a pot, soak the bamboo shoots, add salt and 1 spoon of vinegar
STEP 6/19
When it starts to boil, lower the heat and boil for about an hour
STEP 7/19
Lime from bamboo shoot? It doesn't matter if you take out the bad stuff or just boil it for a long time
STEP 8/19
Boil it enough and rinse it in cold water when it's gone
STEP 9/19
Soak it in cold water for at least half a day
STEP 10/19
I trimmed it the night before and soaked it until the next night, but if I put it in cold water, the water became murky and it was finished
STEP 11/19
Now rinse it clean again
STEP 12/19
Cut it into bite-sized pieces
STEP 13/19
After cutting it with the comb pattern
STEP 14/19
After leaving a bit of moisture, pack it as much as you want to eat and store it in the freezer
Finished preparing bamboo shoots ^^
STEP 15/19
2. Stir-fried bamboo shoots
If you have raw shiitake mushrooms, use raw shiitake mushrooms. I only use dried shiitake mushrooms, so soak them in cold water first
STEP 16/19
Add sliced bamboo shoots and soaked shiitake mushrooms, garlic, soy sauce, and lifting first
After mixing it
STEP 17/19
Stir-fry it without adding oil. Add broth or water and stir-fry it over low heat
Cook it, add salt to the seasoning
STEP 18/19
Lastly, add green, red pepper, green onion, and pepper and stir lightly to cook with residual heat. ^^ You can add sesame salt and I stir-fry it with perilla oil
STEP 19/19
I didn't put it in, but it's delicious even if you add perilla seed powder and stir-fry it
If you have allergies, wear plastic gloves
