STEP 1/7
First, wash octopus with thick salt or flour to remove foreign substances from the sucker. Wash while checking if there are any foreign substances on the sucker. And if you wash it like this, a lot of slippery mucus can fall out. After removing foreign substances like that, wash them in clean water three or four times again. I didn't have to remove the internal organs of the body using fresh creatures' octopus.
STEP 2/7
Boil octopus in boiling water. Please put rice wine in here to catch the smell and fishy smell. Octopuses have different times of ripening between the legs and the body, so if the legs are cooked, separate the body and the legs and cook the body more. Boil the legs in boiling water over high heat for about 7 minutes. When the octopus is red, it's all boiled. Because if it's boiled too much, it becomes tough. If you're suspicious, it's good to cut the end of your leg and check it out.
STEP 3/7
Finally, the octopus is starting to glow red. At this time, cut off the leg and take it out. And boil the body part more. Of course, only if you have internal organs in your body. If it's frozen octopus, remove the intestines before trimming it, boil it, and take it out as a whole
STEP 4/7
It's an octopus leg. If you're going to eat it right away, put it in ice water and cut it 2-3 minutes later, so you can eat more chewy octopus sashimi. I heard that if you put it in ice water, the flesh expands and becomes firm.
STEP 5/7
Prepare it by cutting it into bite-sized pieces. If the octopus was huge, it would taste better to cut the legs, but it's not fun to cut because it's a small size of 500g. If you're a big guy, you can cut it in a prettier shape if you stir it when you cut your legs.
STEP 6/7
I don't eat it right away, so I cut it, put it in an airtight container, and stored it in the refrigerator. You can take it out and serve it on a plate when you eat it.
STEP 7/7
Red pepper paste with vinegar is the best for octopus sashimi!!! Put the octopus sashimi on a plate and put a small bowl of red pepper paste in the middle. I put a bit of wasabi on it. Red pepper paste and wasabi go well together ~~~
Don't throw away boiled octopus and use it as a broth for octopus soup, sujebi, or kalguksu, or it's very delicious even if you boil it with ramen. Octopus boiled water contains a lot of taurine, so you can just drink it like water.
