STEP 1/9
I used to make raspberry extract by putting only sugar and raspberry in a barrel, but it molds on the top to see what went wrong.
So I decided to make it by boiling it this time..
STEP 2/9
The raspberry is slightly dusted under running water and poured directly into the barrel. Add sugar and raspberry in 1:1.5 and mix. I want to eat it less sweet, and I don't think I need to put it in 1:1 like when I make an extract because the moisture is gone when I cook it.
STEP 3/9
Mash the raspberry with a masher and stir over medium heat in a gas stove.
Raspberry seeds are hard, so it's uncomfortable to eat, but it's a waste to filter them out and throw them away, so I just put them all in.
Boil it to the point where the moisture is reduced by 20%.
STEP 4/9
I cooled it down and put it in a hot sterilized glass bottle.
STEP 5/9
Raspberry wine ade
