STEP 1/9
I'm going to use the broth, so I'll filter the broth and put the ingredients in the broth
I made tzuyu with soy sauce~~

30g of Solchi, 3 dried leeks (30g), 30g of kelp, and 12 cups of dried radish + dried apple water were added and boiled!!!
When it starts to boil, take out the kelp and boil the broth

I boiled the broth first, and added soy sauce, grilled onions, and green onions~~~

How to make tsuyu
4 cups of broth 3~4 cups of soy sauce 1(I'm a half cup) cooking wine 2 cups Cheongju 1 cup ginger liquor 1/2 cup
I added grilled onion and grilled green onion and boiled it for a while~~~
(I added a little bit of sugar because I added dried daikon and dried apples to the broth.)
If you use green onions and onions on fire, it doubles the sweetness
It's smoked and the scent gets better~~
STEP 5/9
Turn off the heat in the boiled braised soy sauce and leave it for about 10 minutes
When it's boiled, it tastes bitter
Turn off the heat, put it in, leave it for about 10 minutes, and then take it out
You can enjoy the unique smoked scent of soy sauce~~~

Leave the soy sauce with katsuobushi for about 10 minutes, then strain it through a sieve and throw away the ingredients

The Japanese word for soba is buckwheat
Buckwheat soba means buckwheat noodles
Soba is a form of food and you put buckwheat noodles in it
a strange expression created by adding Korean to Japanese food
In Korea, soba is called buckwheat noodles~~

I like broth with katsuobushi, so if you make soy sauce with katsuobushi
If you use soy sauce, it will make the dish taste better
If you make a lot of tzuyu, it's reliable!!
