STEP 1/8
First, prepare the kelp. As I explained above, white powder on the surface of the kelp affects the flavor, so don't wash it with water or wipe it with a wet dishcloth Use a dry dishcloth to brush it off
STEP 2/8
Slice the kelp and cut it on both sides I think this will make the kelp broth better
STEP 3/8
Next, prepare cold water Besides the white powder mannitol of kelp, glutamic acid, which is responsible for the flavor, is said to be good for cold water
STEP 4/8
Boiling kelp in cold water for 5-6 hours is similar to the amount of glutamic acid that comes out when boiled, but when you boil kelp, it comes with alginic acid, making the soup taste dry...And the food goes bad easily...
STEP 5/8
So rather than boiling it, it's a good way to make kelp stock in cold water
STEP 6/8
Then when do I wait 5-6 hours? So the way I use it! Prepare a container to make kelp in the refrigerator, put a lot of kelp, pour water... I put it in a transparent glass bottle for filming, but I usually put it in an airtight container and use it inside the refrigerator. I use it when I need it, replenish water again, and change it to a new kelp when the kelp no longer works (when the broth doesn't come out yellow)
STEP 7/8
Then you can use kelp broth whenever you need it, so it's very convenient Another way to use this when you're not even ready... Likewise, wipe the surface of the kelp with a dry dishcloth or kitchen towel... It's good to cut both sides of the kelp, but we don't have time for that... Put kelp in a glass container, boil water in a coffee pot, cool it down, and pour it into a bottle
STEP 8/8
Then, you can prepare kelp broth faster than when you put it in cold water
How to pick kelp... It's good that kelp is not thin or thick and has a lot of white powder on it. The white powder on the surface of the kelp is called mannitol It acts as a natural seasoning that gives off a savory taste (especially sweetness)
