Braised burdock with burdock, making fried burdock!
Fried burdock and braised burdock side dishes with one of the seasonal foods in February! (1st generation of Bucal supporters, recipe by Meeking)

Cooking Steps
STEP 1/16
Please prepare burdock.
STEP 2/16
There is soil on it, so please wash it clean and trim it.

Cut into appropriate pieces.

Peel off the burdock.

If you soak it in water with a spoon of vinegar right after peeling, it prevents browning and gives off a bitter taste.

Shred the burdock that will go into braised burdock at intervals of about 3mm. Immediately after shredding, soak it in vinegar water.

Cut the burdock that will go in the fried burdock into slanted slices.

While preparing, rinse the burdock soaked in vinegar by hand, rinse it in cold water, and drain it with a strainer.

Make the sauce for braised burdock. Add 4 spoons of soy sauce, 1 1/2 spoons of sugar, and 2 spoons of cooking wine and mix.

Grease a frying pan with cooking oil and stir-fry drained burdock over high heat for about 2 minutes.

Add the sauce and 2/3 cups of water and simmer for a while.

When the burdock color turns dark brown and the soup is almost all watery, add a spoon of oligosaccharide and mix.

If you finish with a spoon of sesame oil and sesame seeds, braised burdock is done!
STEP 14/16
It's time to make fried burdock. First, add a spoon of vinegar and a pinch of salt to remove the taste of Arin, blanch the burdock cut sideways, and rinse it in cold water.

Drain burdock rinsed in cold water with a kitchen towel, coat it with frying powder, and mix it with frying powder and water in another bowl to make frying batter.

The powdered burdock is covered with frying batter and fried in hot oil. Turn it upside down and when the color changes, take it out and you're done with the burdock fries!
The root vegetable burdock, which has a good crunchy taste, is rich in inulin, a type of sugar, which improves kidney function and also promotes bowel movements, so it is active as a diet food! I recommend February's seasonal food.
