France's representative Christmas dish, Cocobang/Coq auvin
This is the main dish that I usually eat on Christmas in France. Whenever I make a Coco Room, I'm so confident that my French acquaintances tell me to open a restaurant specializing in Coco Room! ^_^ Boil it for a long time, and the flesh and bones separate just by touching it, and the meat melts gently in the mouth. It's not as hard as you think, so you should try making a Coco Room this Christmas

  • Carrot
    3ea
  • Garlic
    7piece
  • red wine
    2/3bottle
  • Flour
    1/2cup
  • Butter
    1T
  • Chicken stock
    0.5cup
  • tomato paste
    1.5T
  • Herb powder
    1.5T
  • Salt
    1t
  • ground pepper
    1t
Cooking Steps
STEP 1/11
Season chicken with pepper and salt while preparing other ingredients.
STEP 2/11
Cut carrots and onions into appropriate sizes, and prepare garlic after peeling.
STEP 3/11
You can slice garlic and put it in or use whole garlic as it is.
I tend to use mushroom as a whole, but if it's too big, cut it in moderation.
STEP 4/11
Cover a large skillet with oil, add bacon and garlic and stir-fry until bacon is almost done.
When bacon is cooked, remove with garlic and place on a plate.
STEP 5/11
Put flour on the chicken
Place the bacon in the baking pan and bake over medium to high heat until the surface is golden brown.
tip.
1. Bake with oil from the bacon stir-fry. If you don't have enough oil, add a little cooking oil.
2. When you roll the thigh meat, grill it first with the skin facing the floor.
STEP 6/11
Pour enough red wine to cover the chicken when it is cooked until it is golden brown. (About two thirds of a bottle)
STEP 7/11
Add tomato paste, chicken stock, 1 cup water, and mixed herb powder right away.
The picture below is a picture of the solid chicken stock I use.
tip.
If you use liquid chicken stock or chicken broth, you don't need to add water.
STEP 8/11
After the step 7 process, put the lid on, set the heat to low, and boil.
STEP 9/11
Melt the butter in a heated frying pan.
STEP 10/11
Add the prepared vegetables (mushrooms, onions, carrots)
Sprinkle a pinch of salt and pepper and stir-fry.
Stir-fry onions until they begin to be transparent.
Or stir-fry the melted butter water until it seeps into the vegetables and disappears.
STEP 11/11
When the wine starts to boil in the pot, add all the stir-fried vegetables.
And then I'll cover it again and turn it on low heat for an hourPlease boil it down for about an hour and a half.
You can boil it down until the sauce feels a bit thick.
Tip. If you add 1T of flour about an hour after it starts to boil down, it feels thicker faster.
1. You can use chicken legs or chicken breasts for chicken. I don't use chicken breast very often because it's stiff, so you can decide it according to your personal preference. 2. Red wine isn't just for drinking, it's for cooking, so you can use anything cheap that costs 2-3 euros (about 3,000 won) 3. If you don't have butter, you can replace it with margarine. 4. You can use any kind of powder or liquid chicken stock. You can just taste the chicken broth. 5. If you don't have tomato paste, you can just use tomatoes. 6. If you don't have vegetables, you can add one or two of them. 7. I put in Time, Rosemary, and Basil powder, but I wrote Mix Hub in case you can't get it easily in Korea. 8. At first, the taste of wine is strong, but if you boil it over low heat for a long time, the taste of alcohol will disappear, so you don't have to worry. ^_^ 9. Cocobang has rice, spaghetti, pasta, fries, and mushroom potatoes according to your preference.. You can eat it with your back.

Maybe it's because of the wine taste, so I added balsamic vinegar and it got better Next time, I'll have to do it for my parents, too
