The golden recipe for Jongwon Baek cabbage kimchi
I ate bossam at home last week. I'm putting up the golden recipe for cabbage fresh kimchi that I made then! I made it with a recipe for Jongwon Baek geotjeori, and as expected, the sauce for geotjeori was really delicious. You can easily make it with the ingredients you have at home, and it's because cabbage geotjeori is made into a golden recipe, so the fussy crybaby thumbs up!! I put it up. I'll start the recipe for fresh Jongwon Baek kimchi, which is the most delicious if you eat it with bossam or kalguksu!

Cooking Steps

If you cut the bottom of the cabbage, the leaves will fall off. Then, cut it in half like the picture above, and cut it diagonally and diagonally.

Prepare onions and carrots by shredding them. Cut the green onion into 4 to 5cm pieces and chop it into long pieces.

First, I will pickle the cabbage. I made Jongwon Baek seeds by blanching them slightly in salt water as a way to make them faster, but since they say that it's much better to pickle them over time, I'll make them by salting them. Put a little bit of cabbage on a big bowl, sprinkle thick salt, and then add thick salt on top of it. Finally, pour 1 cup of water, mix it, and marinate it for about 40 minutes to an hour.

Put 1 cup of red pepper powder (thick red pepper powder), 1/2 cup of fish sauce, and 2TS of salted shrimp into a small bowl and mix it first as if you are soaking the red pepper powder. Then 2/3 cups of sugar, 2/3 cups of ground garlic. Add about 1ts of minced ginger (a little bit) and mix well again to complete the seasoning of the fresh kimchi.

Now, it's been about 40 minutes. After about 20 minutes, I mixed it once or twice. When you bend the cabbage, it doesn't break, and if it bends gently, it's well salted.

Then, rinse it 2-3 times under running water and squeeze it to remove the water. The picture right above is pickled cabbage that has been drained to a certain extent,

In a large bowl, mix cabbage, onions, carrots, and green onions with only half of the seasoning.

If you mix it like this, add the remaining green onions and mix it again. I recommend mixing green onions or chives at the end because they are easy to mix. It's mixed really well, right? Lastly, taste it. If you put it on a plate, it's delicious and delicious cabbage geotjeori is complete! The amount of seasoning changes depending on the amount of salted fish, seasoning, and cabbage. Add 1 to 2TS each, mix it, and add more. I put in 2~3TS, so the seasoning was perfect.
