STEP 1/5
Beat the eggs in a bowl, add honey, rice syrup, and sugar, and melt all the sugar while stirring well with a medium-hot water whisk.
STEP 2/5
If the egg water is warm and the sugar is all melted, whip it with a hand mixer. Whip it to the middle level and hold it for about 3 seconds when you drop the foam.
STEP 3/5
The texture of the foam isn't good yet Whip to the slowest level and clean up the big bubbles to create fine, dense bubbles.
STEP 4/5
When the egg foam is complete, add sifted flour to it, sweep it to the floor with a big movement, mix it well, mix rice wine, milk, and vanilla extract together, and mix it with a spatula so that it can mix well with the dough overall. Keep the shape of the stairs when you drop the dough, and if you drop it, the dough is complete.
STEP 5/5
Drop the dough high into a wax mold, pan it, stir it a couple of times with chopsticks to clean the air bubbles, and bake it in an oven preheated to 170 degrees for 45 to 50 minutes.
If you don't have rice wine or rum, you can skip it.
