I peeled off the skin and you can see the inside of a pretty bamboo shoot. Isn't it amazing that bamboo shoots can grow up to 1 meter a day?

Cut the peeled bamboo shoots in half.

Put bamboo shoots in the rice-floored water and add a little salt, then boil over high heat for about 30 minutes.

Don't take it out right away, leave it in a pot and cool it down. When it cools, soak it in cold water to remove the Arin flavor of bamboo shoots.

Shake off the water and cut the bamboo shoots into 5mm thick pieces,

Slice shiitake mushrooms into the same thickness.

I prepared bell peppers by removing seeds and chopping them, and carrots by cutting them wide and thin.

Soak dried mushrooms in cold water for about 30 minutes, cut off the bottom, and tear them into appropriate sizes.Slice the garlic and remove the seeds from the dried peppers by hand or cut them with scissors.

Grease a heated pan with grape seed oil and stir-fry garlic and dried red pepper until it smells good.

Add carrots and stir-fry them. Add shiitake and wood ear mushrooms,

Stir-fry bell pepper, bamboo shoots, and chili oil.

When the ingredients are almost fried, add the broth, oyster sauce, soy sauce, mirin, and pepper and boil it,

When it boils, add water starch and adjust the concentration. Turn off the heat, add sesame oil, and mix it's done.
