Cooking Steps

Prepare the same ingredients for samgyetang by washing the eomnamu, milk vetch root, ogapi, and angelica cleanly.

Wash onions, green onions, and garlic thoroughly.

Put all the prepared ingredients into the pocket and tie them together
Then, pour plenty of water and simmer for a long time. It's to make soup for Chogye-tang and Chogye-guksu.
STEP 4/13
Put the whole chicken prepared by washing it in the soup and boil it. For your information, I boiled it in a pressure cooker for about 30 to 40 minutes. It's good to soak the chicken in the soup
STEP 5/13
Remove the well-boiled chicken from a bowl and cool it, then remove the bones and tear the flesh into small pieces.
STEP 6/13
Chogye-tang and Chogye-guksu are served for a cool taste, so wrap the chicken that has been ripped off and put it in the refrigerator. In the meantime, prepare vegetables for Chogye-tang and Chogye-guksu while cooling the chicken broth. How to make Chogye-tang/Chogye-guksu is important!! Prepare all ingredients cold
STEP 7/13
Cool down the chicken soup. That way, the oil solidifies and it's good to remove the oil from the chicken soup. I will remove the oil and use only clear broth.

A couple of cold noodle broths sold on the market are frozen in the refrigerator and used as soup for Chogye-tang and Chogye-guksu. (Soup used in Chogye-tang and Chogye-guksu: chicken broth + cold noodle broth) Prepare a slightly frozen cold noodle broth in a large container, cool it down, and mix it well with the cold noodle broth. You can taste it in a 1:1 ratio.

Mix cold noodle broth and chicken broth well and add vinegar and lotus mustard.
STEP 10/13
The taste of the soup is important as a way to make chogeumgyetang!! The combination of cold noodle broth and chicken soup and the cool and pungent taste should be given to enjoy the coolness and best taste after completing making Chogye-tang and Chogye-guksu.
STEP 11/13
Now, prepare vegetables for Chogye-tang and Chogye-guksu. Shred cucumber, paprika, and lettuce. Slice lettuce, wash it, and leave it with ice. That way, the lettuce is crunchy and good! I'll boil the eggs.. Cut the watermelon for the Chogye noodles and prepare it.

Boil buckwheat noodles and rinse them in cold water.
