STEP 1/6
Whip the egg whites about 60% using a whisk so that they do not fall off when lifted.

Divide the sugar 2-3 times and make a firm meringue.

Mix 1/3 of the meringue in the pre-sourced almond powder, sugar powder, and soft flour, then add the rest of the meringue and mix well.

Place the dough in a piping bag, place the dacquoise mold in an oven pan and place the dough.
STEP 5/6
Flatten the dough with a scraper, remove the dacquoise mold, sprinkle the sugar powder, and bake in the oven at 180 degrees for 15-20 minutes.
STEP 6/6
Place whipped cream firmly on top, then squeeze over cooled dacquoise in a piping bag and sand it.
