STEP 1/3
Wash the bean sprouts, blanch them in boiling water for about a minute, rinse them in cold water, drain them, and chop them.
Crush tofu with the back of a knife and squeeze it slightly in a wet cloth.
Wash the chives and chop them.
Soak the glass noodles in water for about 30 minutes, boil them in boiling water for about 6 minutes, rinse them in cold water, drain them, and cut them. (Cut the glass noodles into very small pieces with scissors.)
STEP 2/3
Bean sprouts, tofu, chives in a large bowl. Add glass noodles, ground pork, 2 egg yolks. Minced green onion 6T. Minced garlic 2T. Sesame oil 2T. Oyster sauce 1T. Fine salt 1T and a half. Cooking wine 2T. Add a small amount of pepper powder and mix well.
If you make it like this, the meat filling is complete!!!
Now, should we make rolled dumplings?
Shape the filling into 2cm round, roll it well in flour, coat it with egg whites, and roll it back in flour.
If you roll it in the flour and leave it for a while, the moisture forms in the dumpling and the flour seeps in..
Then, I'll roll the flour one more time.
If you put it on the steaming pot and steam it for about 10 minutes, the rolled dumpling is complete.
STEP 3/3
I made rolled dumplings and some meat dumplings..Some made kimchi hot pot.
Put the meat dumplings into the dumpling skin one by one, coat the edge of the dumpling skin with egg white, and shape it.
Put dumplings in a steaming steamer and steam them for about 10 minutes.
Kimchi hot pot is made by cutting only the stem of kimchi into a part of the dumpling, squeezing the kimchi soup, and adding it to make dough.
Put this dough in cabbage kimchi leaves, roll it, put it in a hot pot, and boil it with anchovy kelp stock.
