STEP 1/5
Making pickled cabbage for bossam: lettuce instead of pickled cabbage. You can prepare perilla leaves..
It's good with pickled cabbage, right?
I bought one cabbage at the market. It weighs about 900 grams. Cut the cabbage in half... Sprinkle salt on it and soak it for about 2 hours with 1 cup of water.
Wash one sheet at a time after pickling, drain and prepare.
==> The amount of salt in the cabbage is cup.
STEP 2/5
Chop the radish. (Slightly thick with 0.5 cm thickness)
Put the shredded radish in a bowl, add 2T of bay salt, 1T of sugar, 2T of vinegar, and mix it well..
Marinate for 30 minutes.
Pickled the radish until it's cooked..Rinse it in cold water twice and drain it on a basket.
==> Some people use radish kimchi that is sticky with bossam by drying it..
It's good to chew when there's no moisture..So you can squeeze a little bit of water with a cotton cloth and prepare it.
I just squeezed it with my hands and prepared it.
==> The white part of radish tastes better.
STEP 4/5
Cut 4-5 stems of chives into 4cm long pieces..
Pepper powder 3T half. 1T and half of anchovy sauce. Minced garlic T. 3T of pear juice. 1T of sesame seeds. About T of oligosaccharide
Put it in and mix it.
==> If it's bland, season it with a small amount of fine salt. I put in as much salt as a pea
I seasoned it. (It's better to mix it with bossam.)
==> Adjust the amount of oligosaccharide according to the sweetness of pear juice.
STEP 5/5
Mix it like this...If you want to add oysters, add them and mix them gently.
Add oysters just before eating and toss. ==> I mixed it, but the red water is less...If you do, add a little pepper powder.
