STEP 1/9
Ginger is said to have a lot of nutrients in its shell, so it cleans the soil well. There is a lot of soil between the ginger, so wipe it thoroughly with a toothbrush.
STEP 2/9
Wash ginger well and dry for about a day.
STEP 3/9
For this dried ginger, slice it into thin slices.
STEP 4/9
Please sterilize the glass bottle with ginger in advance. To dry the water clean after disinfection, put it in the microwave and return it for about 2 minutes to dry the water cleanly. It dries the water and disinfects it again.
STEP 5/9
Add 250g of sugar to 300g of sliced ginger, mix well and put it in a bottle, and cover the mouth of the bottle with the remaining 50g of sugar. Ginger has a lot of moisture, so water comes out quickly. You can have ginger tea in 3 days to a week. Stir the sugar that sinks to the bottom with a water-free spoon once a day. Stir for about four days and the sugar will no longer settle.
STEP 6/9
If you spread the sliced ginger on the strainer and dry it for about 3 days, it will dry like this.
STEP 7/9
Put the crispy dried ginger in a grinder and turn it to make ginger powder.
STEP 8/9
Instead of slicing into large and wide slices to make ginger powder, gather the remaining cuts and grind them in a cutter.
STEP 9/9
If you put ginger in the disinfected bottle and add refined rice wine (Jeongjong = Cheongha = Baekhwasubok), ginger liquor is completed.
Ginger liquor is very good to use to remove the smell of meat when making fish or ribs. After a week or so, remove the ground ginger. Otherwise, the color of the ginger changes inside. It can be stored in the refrigerator of ginger liquor for 6 months.
