STEP 1/8
Measure sugar, salt, and yeast so that they don't touch each other. Then mix and add all ingredients except butter and start kneading.
STEP 2/8
When the dough is about to clump together and gluten is formed, add butter and knead again to smooth
STEP 3/8
If the gluten is well formed, make the surface smooth and apply the first step ~ They do it for about 40 minutes!!! Don't be too restricted by time and by volume!!! First ferment until it swells by 2 to 2.5 times. You can make Soboro while the dough is fermenting.
STEP 4/8
After the first fermentation, divide the dough by 40g and give it a bench time (=intermediate fermentation) for about 15 minutes because it is round.
STEP 5/8
After medium fermentation, roll the dough tightly again~ Place an appropriate amount on the work surface with a sobor. Hold the end of the tightly rolled dough and soak it in a water bowl ~ Even if you don't paint it one by one, you can easily attach Soboro.
STEP 6/8
Dip it in the water~Put one dough on top of the soboro and press it hard to coat it with a lot of soboro~~~~.
STEP 7/8
Put a lot of Soboro on the pan and pan it at a proper interval.
STEP 8/8
After finishing the plastic surgery, start the second fermentation after panning. Time is about 40 to 50 minutes, and the second fermentation is also done by volume rather than time. Bake in a 190 degree oven for 17 to 19 minutes.
