STEP 1/3
Whisk in cold egg whites, divide sugar 3 to 4 times and make a solid meringue (keep in the refrigerator until used). Add hot melted butter to pre-sieve powder and mix evenly.
STEP 2/3
Add egg yolks and mix; add ground lemon peel and mix. Mix the meringue about 1/3 first and quickly mix the remaining meringue evenly so that the bubbles do not die.
STEP 3/3
Fill 80% of the finished dough in a muffin mold and bake in an oven preheated to 200 degrees for 15 to 20 minutes.
