I'm going to put oil on a heated pan and fry the vegetables The order of stir-frying vegetables is from hard vegetables. Potatoes are the hardest of all the ingredients for this fried rice prepared by Yekko. There may be a question why you stir-fry hard vegetables first. Vegetables have different cooking temperatures, but hard ones require more cooking time. If you stir-fry them all at once, if you cook them until the hard vegetables are cooked, the vegetables that are weak to the fire will fade and the color will die. So when you stir-fry vegetables, you start with hard ones over high heat.

When the potatoes are done, add all the other ingredients at once and stir-fry them over high heat.

The vegetables are stir-fried, so please add rice now. I used white rice rather than mixed grains because I used the colors of vegetables beautifully. If you don't have white rice, you can add mixed grains.

Stir-fry vegetables and rice evenly. Then turn off the heat, season with salt, and turn it over again. There is residual heat left in the frying pan after turning off the heat, so you can cook it well even if you mix it after turning off the heat.

It's a vegetable fried rice that's delicious even if you eat it like this, but Yekko put the fried rice in an oven because she's going to put the stretched mozzarella cheese on top and bake it in the oven today.

Then preheat the oven to 180 degrees and place the cheese on top. Place mozzarella cheese on top of fried rice and trim it so it doesn't run down.

I baked it in an oven preheated to 180 degrees for 5 minutes, and the cheese melted very well and was lightly browned.If you don't have an oven, microwave it for 30 seconds to 1 minute.

I scooped it up with a fork and the cheese is all over. If I had eaten it right away without a proof shot, the cheese wouldn't have cooled down, so it would have stretched out even more, but the cheese slightly cooled down and hardened. Even so, the taste is killed, and the fun of increasing cheese and the fantastic meeting of chewy cheese and fried rice make hungry Yekko so happy.
